The half life of ozone depends on temperature. In the case of ozonated oil and water, the colder the storage method, the longer it lasts. If you bubble o3 through distilled water and it is left at room temperature, the ozone will quickly decompose back into non ozonated water. If refrigerated, ozonated water will last roughly 24 hours. Either way, it’s going to turn back into water. If you bubble o3 through olive oil for a long enough period to bleach it out and turn it into a translucent paste, the o3 will last much much longer as it’s trapped inside the oil. The ozonation process is performed at room temperature but once the desired consistency has been reached, the oil is transferred into containers and immediately refrigerated. This image below shows what refrigerated ozonated olive oil looks like versus room temperature oil. If you forget to refrigerate your oil after using it, no worries. Simply put it back in the fridge. We recommend storing ozonated olive oil in a freezer. While it will become more solid, it won’t freeze like ice and certainly won’t stop you from using it when you need some. Remember to use a clean utensil each time to avoid contaminating the oil and scrape off what you need. A little goes a long way.
